Self-rising flour. What does that bring to mind for you? A brand name? A no-no, because you prefer plain flour?

Self-rising has been more popular in the South than in the rest of the United States. Some cooks are a little snobby about flour and don't recommend self-rising. I would bet they have never tried it. We are most comfortable with what we know and southerners know self-rising flour.

My Mama always used Martha White products at our house and self-rising was preferred. Growing up in Nashville most kids heard Flatt and Scruggs sing the Martha White jingle in TV commercials or in radio ads. The trademark words Hot-Rize and Goodness Gracious it's Good are familiar to any good old southern girl, or boy, of a certain age.
